Undercover Chef Tip – No egg on your face

Ever read a recipe or seen a tip advising on room temperature eggs whilst yours are safely nestled in the fridge?

So how do you get eggs to room temperature quickly and easily? Immerse them in hot (not boiling, we don’t want to cook them) water and allow to sit for about 2-3 minutes until they are warm.

So why use room temperature eggs? This is more for baking that requires whipped eggs or whites as cold egg whites don’t whip as well which can make a cake such as an angel food cake slightly more dense.
