SAVOURY MUFFINS
Ingredients
- 2 ½ cups Self Raising Flour
- ¾ cup milk
- 1 egg lightly beaten
- ½ cup vegetable oil
- 2/3 cup grated cheese
Add as you like:
- Diced ham (50 – 100g)
- Corn kernels (50 – 100g)
- Grated zucchini (1/2 small)
- Diced roast pumpkin (50 – 100g)
- Diced red capsicum (50 – 100g)
Method
- Preheat oven to 180 degrees fan forced. Fill muffin trays with papers
- Combine flour, cheese and vegetables in a bowl
- Make a well in the centre
- Add the milk, egg and oil in a jug. Pour into flour well
- Mix until well combined
- Spoon evenly into 12 muffin papers
- Bake for 15 – 20 minutes until golden and cooked through
- Cool on wire rack and enjoy
