SAVOURY MUFFINS

Ingredients

  • 2 ½ cups Self Raising Flour
  • ¾ cup milk
  • 1 egg lightly beaten
  • ½ cup vegetable oil
  • 2/3 cup grated cheese

Add as you like:

  • Diced ham (50 – 100g)
  • Corn kernels (50 – 100g)
  • Grated zucchini (1/2 small)
  • Diced roast pumpkin (50 – 100g)
  • Diced red capsicum (50 – 100g)

Method

  1. Preheat oven to 180 degrees fan forced. Fill muffin trays with papers
  2. Combine flour, cheese and vegetables in a bowl
  3. Make a well in the centre
  4. Add the milk, egg and oil in a jug. Pour into flour well
  5. Mix until well combined
  6. Spoon evenly into 12 muffin papers
  7. Bake for 15 – 20 minutes until golden and cooked through
  8. Cool on wire rack and enjoy
