CHOCOLATE CRACKLES

Ingredients

  • 100g coconut oil
  • 100g copha
  • ¾ cup icing sugar
  • 4 cups puffed rice
  • 1 cup shredded coconut
  • 3 tbsp cocoa

Method

  1. In a large bowl mix the puffed rice, icing sugar, coconut and cocoa together
  2. Carefully melt the copha and coconut oil in a saucepan over a low heat
  3. Pour over the rice bubble mix and mix well
  4. Spoon into muffin cases and freeze for 5 minutes then refrigerate until set (approx. 20 minutes)
