Chocolate Weetbix Slice

Ingredients

  • 1 cup (85g) dessicated coconut
  • 1/2 cup (120g) brown sugar
  • 1 cup (150g) self-raising flour
  • 2 tbsp cocoa powder
  • 150g salted butter
  • 1 tsp vanilla essence

Icing

  • 1 1/2 cups Coles Soft Icing Mixture
  • Extra 1 tbsp cocoa powder
  • 2 tbsp hot water

Method

  1. Preheat oven to 180°C. Lightly grease a 16x26cm baking pan and line with baking paper.
  2. Break up weetbix. Place into a mixing bowl with coconut and sugar.
  3. Sift over flour and cocoa powder and stir until combined
  4. Melt butter and add to dry ingredients. Add vanilla. Mix well.
  5. Spoon mixture into prepared pan and press down with back of spoon or spatula to level.
  6. Bake for 15 minutes or until cooked. Allow to cool slightly before icing
  7. Sift icing sugar and cocoa powder into a small bowl. Add water and stir well.
  8. Ice slice while still warm. Chill until icing is set.
  9. Cut into squares to serve.
