Easy Chocolate Slice

This recipe is a great introduction to measuring and baking for kids and beginners alike. I have added my almond meal substitution which makes for a wonderful texture and taste to this simple slice. Ingredients

  • 150 g butter melted & cooled
  • 3/4 cup brown sugar
  • 1 egg lightly beaten
  • 1 tsp vanilla extract
  • 3/4 cup plain flour
  • 1/2 cup self raising flour
  • 1/4 cup cocoa powder
  • 1/2 cup desiccated coconut

For almond meal variation add 1/2 cup almond meal and take out 1/4 cup plain flour

Method

  • Preheat oven to 170 degrees celsius (fan-forced).
  • Grease and line with baking paper a 20cm x 15cm slice tin 
  • Measure butter, sugar, egg and vanilla into a bowl
  • Stir until combined
  • Sift plain flour, self raising flour and cocoa together into the bowl
  • Add the coconut and stir until mixture has combined – for almond meal variation add here and mix to combine
  • Spread the mixture into the lined pan and press down with the back of a spoon or spatula to even the surface
  • Bake for 25-30 minutes or until just firm

For the icing

  • Sift the icing sugar and cocoa into bowl
  • Add the butter and boiling water and stir together until well mixed and spreading consistency
  • If too thin add more icing sugar, if too thick add small amount of water until correct consistency
  • Spread the icing over the still warm slice and decorate with sprinkles
  • Cut and enjoy!

Slice will last 3-4 days in air tight container. If in warm climate best refrigerated to prolong shelf life. Freezes very well for keeping for lunchboxes
