Stuffed Potato – Serves 2

Ingredients

2 large scrubbed potatoes

Option 1

Small tin of four bean mix

Tin chopped tomatoes

Mexican spice

Grated cheese

Option 2

Diced bacon

Grated zucchini

Baby spinach

Grated cheese

Method

  1. Preheat oven to 180 degrees
  2. Pierce potato skin with a fork all over – place into boiling water and allow to simmer for 10-15 minutes or until a knife slides in
  3. Carefully remove from water and cut a large cross into the top of the potato and open out
  4. Place in a square of greased alfoil

Option One – Mix all beans, tomato and spice together in a bowl. Spoon over potato. Bring up sides of alfoil to enclose potato. Top with cheese and bake for 5-10 minutes until golden

Option Two – Mix bacon, zucchini and spinach together in a bowl. Spoon over potato. Bring up sides of alfoil to enclose potato. Top with cheese and bake for 5-10 minutes until golden
