Spaetzle

  • Ingredients

  • 4 eggs
  • 1/3 cup milk
  • 2 cups plain flour
  • pinch salt and pepper

Method

Mix the egg and milk together in a bowl

Season with salt and pepper

Whisk is flour to form smooth batter

Place saucepan of water onto boil

Reduce to simmer

Use either a spaetzle maker or large hole colander and push batter through into water

Allow noodles to simmer for a minute or two and remove with slotted spoon

Either serve in chicken broth or saute with butter and fresh herbs
